A nutritious and delicious Italian casserole packed with vegetables and lean protein.

Preheat oven to 375°F
Per serving
Cook whole wheat pasta according to package instructions until al dente, then drain.
In a large skillet, heat olive oil over medium heat.
Add diced chicken breast and cook until browned and cooked through, about 7-10 minutes.
Stir in spinach, zucchini, red bell pepper, Italian seasoning, salt, and black pepper.
Cook until vegetables are tender, about 5 minutes.
In a large bowl, combine cooked pasta, chicken and vegetable mixture, and marinara sauce.
Transfer the mixture to a greased 9x13 inch casserole dish.
Top with shredded mozzarella cheese.
Bake in preheated oven for 25-30 minutes or until cheese is bubbly and golden.
