Preheat oven to 375°F
Per serving
In a large skillet, heat olive oil over medium heat
Add diced onion and minced garlic, and sauté until softened, about 3-4 minutes
Add the lean pork loin, season with salt and black pepper, and cook until browned, about 5-7 minutes
Stir in chopped bell peppers and zucchini, cooking for an additional 3-4 minutes
Add diced tomatoes and Italian seasoning, mix well and remove from heat
Transfer the mixture into a casserole dish, spreading it evenly
Sprinkle shredded cheese on top
Cover with foil and bake for 25 minutes
Remove the foil and bake for an additional 10 minutes, or until cheese is bubbly and golden
