A comforting and hearty chicken and rice casserole, perfect for family dinners.

Per serving
Preheat oven to 375°F
Dice the onion and mince the garlic.
In a large skillet, heat olive oil over medium heat.
Add diced onion and minced garlic, sauté until translucent, about 3-4 minutes.
Add the chicken breast to the skillet, season with salt, black pepper, and paprika. Cook until browned, about 5-7 minutes.
Remove the chicken from the skillet and cut into bite-sized pieces.
In a large mixing bowl, combine the cooked chicken, rice, chicken broth, cream of chicken soup, frozen mixed vegetables, and parsley.
Transfer the mixture into a greased 9x13 inch baking dish.
Cover with aluminum foil and bake for 30 minutes.
Remove the foil and bake for an additional 10-15 minutes, until the rice is tender and the top is slightly golden.
