A comforting and filling beef stew, perfect for family dinners and great for leftovers.

Per serving
Cut beef into 1-inch cubes and season with salt and pepper.
Heat olive oil in a large pot over medium-high heat.
Brown the beef cubes in batches, about 5-7 minutes per batch, until all meat is browned.
Add chopped onions and minced garlic to the pot, cooking until softened, about 3 minutes.
Stir in tomato paste, cooking for an additional 2 minutes.
Add beef broth, bay leaves, thyme, and bring to a simmer.
Chop carrots and potatoes into bite-sized pieces and add to the pot.
Reduce heat to low, cover, and simmer for 1.5 to 2 hours until the beef is tender.
Remove bay leaves before serving.
