Delicious and kid-friendly cheesy chicken quesadillas that are quick to make and packed with flavor.

Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Place one tortilla in the skillet, and sprinkle 0.5 cups of shredded cheese evenly on half of the tortilla.
Add 0.5 cups of shredded chicken on top of the cheese.
Fold the tortilla over to create a half-moon shape.
Per serving
Cook for about 3-4 minutes on each side until the tortilla is golden brown and the cheese is melted.
Remove from skillet and repeat the process with remaining tortillas and filling.
Slice each quesadilla into wedges and serve warm with sour cream and salsa on the side.
