A classic homemade apple pie with a flaky crust and sweet cinnamon-spiced apples.

Preheat oven to 425°F
In a mixing bowl, combine all-purpose flour, salt, and sugar.
Cut in unsalted butter until the mixture resembles coarse crumbs.
Gradually add water, a tablespoon at a time, until dough forms.
Divide the dough in half and shape into discs. Wrap in plastic wrap and refrigerate for at least 30 minutes.
While the dough is chilling, peel, core, and slice the apples.
In a large mixing bowl, toss the sliced apples with lemon juice, sugar, and cinnamon.
Roll out one disc of dough on a floured surface to fit a 9-inch pie pan.
Place the rolled dough in the pie pan and fill with the apple mixture.
Roll out the second disc of dough and place over the filling. Seal and flute the edges. Cut slits in the top crust to allow steam to escape.
Bake in preheated oven for 15 minutes, then reduce temperature to 350°F and bake for an additional 30-35 minutes, until apples are soft and crust is golden.
Cool for at least 2 hours before slicing and serving.
