A rich and comforting beef stew, perfect for a cozy weekend meal.

Per serving
Heat olive oil in a large pot over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes.
Remove the beef from the pot and set aside. In the same pot, add chopped onion and minced garlic; sauté until softened, about 3-4 minutes.
Stir in tomato paste, beef broth, bay leaves, thyme, salt, and pepper. Bring to a boil.
Return the browned beef to the pot, then add sliced carrots and diced potatoes.
Reduce heat to low, cover, and let simmer for 1.5 to 2 hours, or until the beef is tender.
Remove bay leaves before serving. Serve hot.
