Preheat oven to 350°F
In a mixing bowl, mash the ripe bananas until smooth.
In another bowl, cream together the brown sugar and softened butter.
Per serving
Add eggs and vanilla extract to the sugar mixture, and mix until well combined.
Stir in the mashed bananas into the wet mixture.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Pour the batter into the prepared loaf pan.
Bake for 60 minutes, or until a toothpick inserted in the center comes out clean.
Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
