A quick and easy vegetable fried rice using frozen vegetables.

Heat vegetable oil in a large skillet or wok over medium-high heat.
Add minced garlic and sauté for about 30 seconds until fragrant.
Per serving
Add frozen mixed vegetables and stir-fry for 3-5 minutes until heated through.
Push the vegetables to one side of the skillet and add the cooked rice to the other side.
Pour soy sauce over the rice and mix everything together, stirring for another 2-3 minutes until well combined.
Season with salt and pepper to taste, and add chopped green onions, stirring well before serving.
