In a large mixing bowl, combine shredded chicken, cooked rice, cream of chicken soup, frozen mixed vegetables, milk, salt, and pepper.
Stir in 1 cup of shredded cheddar cheese until well mixed.
Transfer the mixture into a greased 9x13 inch baking dish.
