A fun and easy recipe for kids to learn how to measure dry ingredients accurately while making magical mini muffins.

Gather all your ingredients and measuring cups.
Measure 1.5 cups of all-purpose flour using a dry measuring cup. Level it off with a straight edge.
Add 0.5 cups of granulated sugar to the bowl.
Sprinkle in 1 teaspoon of baking powder and 0.25 teaspoons of salt. Mix the dry ingredients together with a whisk or spoon.
In a separate bowl, measure 0.5 cups of milk and pour it in.
Add 2 tablespoons of vegetable oil and 1 teaspoon of vanilla extract into the same bowl.
Crack 1 large egg into the wet ingredients and whisk everything together until smooth.
Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix.
Preheat the oven to 350°F (175°C).
Spoon the batter into mini muffin tins lined with paper cups, filling each about halfway full.
Bake in the preheated oven for 15-20 minutes, until muffins are golden and a toothpick comes out clean.
