Prepare all your ingredients before cooking (mise en place). This includes slicing the bell pepper, broccoli, carrot, and snap peas, as well as mincing the garlic and ginger. Arrange them in separate bowls for easy access during cooking.
Per serving
Heat olive oil in a large skillet or wok over medium-high heat.
Add minced garlic and ginger to the skillet, stirring for about 30 seconds until fragrant.
Add the sliced bell pepper, broccoli florets, julienned carrot, and snap peas to the skillet. Stir-fry for 5-7 minutes or until vegetables are tender but still crisp.
Pour soy sauce over the vegetables, stirring to combine and heat through for an additional 1-2 minutes.
