Fun and easy sugar cookies perfect for kids to decorate and enjoy!

Preheat the oven to 350°F (175°C).
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
Per serving
Add the egg and vanilla extract to the creamed mixture, and mix until combined.
In another bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing!
Scoop tablespoon-sized balls of dough onto ungreased baking sheets, leaving space between them.
Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely.
Once cooled, decorate with icing or sprinkles if desired!
