A fun and vibrant salad that children can assemble using a variety of fresh vegetables and toppings, promoting meal assembly skills.

Wash the salad greens and vegetables thoroughly under cold water. Be sure to ask an adult for help if needed!
Per serving
Tear the salad greens into bite-sized pieces and place them in a large bowl.
Slice the cherry tomatoes in half (ask an adult to do this if you are not comfortable using a knife).
Peel and grate the carrots, then add them to the bowl with the greens.
Cut the cucumber and bell pepper into small pieces (ask an adult for help if needed).
Cut the avocado in half, remove the pit, and scoop out the flesh with a spoon, then cut into small pieces.
Add all the chopped vegetables to the large bowl with the salad greens.
Sprinkle the feta cheese on top of the salad.
In a small bowl, mix the olive oil, balsamic vinegar, salt, and pepper to make the dressing.
Drizzle the dressing over the salad and gently toss to combine.
