Prepare a large batch of nutritious granola bars, perfect for healthy snacks throughout the week.

Preheat the oven to 350°F
In a large mixing bowl, combine rolled oats, chopped mixed nuts, dried fruit, and salt. Stir well to mix.
Per serving
In a separate bowl, mix honey, peanut butter, and vanilla extract until smooth.
Pour the wet mixture into the dry mixture and stir until fully combined.
Line a baking dish with parchment paper and press the mixture into the dish evenly.
Bake in the oven for 20-25 minutes or until golden brown.
Remove from oven and let cool completely in the pan before cutting into bars.
