Kids will assemble fresh cucumber wraps with cream cheese and veggies without any cooking, enjoying a healthy snack.

Wash the cucumbers under cold water to remove any dirt.
Cut the cucumbers into 6-inch long pieces and then slice them in half lengthwise to create boats.
Per serving
Spread a layer of cream cheese on the inside of each cucumber half.
Fill each cucumber half with shredded carrots, sliced bell peppers, and spinach leaves.
Press down gently to make sure the filling stays in place.
Cut each cucumber wrap into smaller pieces, if desired, to make them easier to eat.
