Heat a large skillet or wok over medium-high heat and add vegetable oil.
Add the chicken pieces to the skillet in a single layer. Let them cook for 3-4 minutes without stirring.

Add the minced garlic and grated ginger to the skillet and cook for 30 seconds until fragrant.
