A traditional Irish dish made with mashed potatoes, cabbage, and scallions.

Peel and chop the potatoes into chunks. Place them in a large pot and cover with cold water.
Bring the pot to a boil over high heat. Add 1 teaspoon of salt and cook the potatoes until tender, about 15-20 minutes.
While the potatoes are cooking, chop the cabbage and scallions.
In a separate skillet, melt 2 tablespoons of butter over medium heat. Add the chopped cabbage and sauté until softened, about 5-7 minutes.
Per serving
Add the chopped scallions to the skillet and cook for another 2-3 minutes.
Once the potatoes are cooked, drain them and return them to the pot. Add the sautéed cabbage and scallions.
Pour in the milk and remaining butter. Mash everything together until smooth and creamy.
Season with salt and black pepper to taste.
Serve warm, garnished with additional butter on top if desired.
