In a separate bowl, beat the egg whites until stiff peaks form, then set aside. In another bowl, beat the egg yolks and then add the milk, melted unsalted butter, and vanilla extract. Mix until smooth.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Then, gently fold in the beaten egg whites until no streaks remain. Do not overmix; some lumps are okay.
Lightly grease the waffle iron with non-stick spray or brush with melted butter, if necessary.
Pour the appropriate amount of batter onto the preheated waffle iron (usually about 1 cup, depending on the size of your iron). Close the lid and cook according to the manufacturer's instructions until golden brown and crispy.
Carefully remove the waffle and keep warm while you repeat the process with the remaining batter.
