Preheat oven to 350°F
Per serving
In a mixing bowl, combine mixed vegetables, summer squash, zucchini, cream of mushroom soup, shredded cheddar cheese, cooked rice, salt, and black pepper. Stir until well combined.
Transfer the vegetable mixture to a greased 9x9 inch baking dish.
In a separate bowl, mix breadcrumbs with olive oil until evenly coated. Sprinkle the breadcrumb mixture over the vegetable mixture in the baking dish.
Bake in the preheated oven for 30 minutes or until the top is golden brown and bubbly.
