Heat oil and butter in a wok over medium heat.
Add ginger-garlic paste and sauté until fragrant (about 1 minute).
Add chopped tomatoes, salt, and sugar. Cook until tomatoes are soft and mushy (about 5-7 minutes).
Blend the tomato mixture into a smooth puree using a blender.
Return the puree to the wok, add heavy cream, cashew butter, and kasuri methi. Simmer for 5 minutes.
Add paneer cubes and garam masala. Cook for another 5 minutes until paneer is heated through.
