Preheat your smoker to 225°F and set up for indirect heat, using fruitwood for a sweeter flavor if desired.
In a bowl, mix brown sugar, smoked paprika, garlic powder, onion powder, black pepper, and salt to create a spice rub.
Per serving
Rub the spice mixture all over the pork shoulder, covering it evenly.
Place the pork shoulder into the smoker and add a small pan of water and apple cider vinegar to keep the moistness.
Smoke for about 4-6 hours until the internal temperature reaches 195°F - 205°F, then remove from the smoker.
Once done smoking, let the pork rest for 15-20 minutes before shredding.
