A nutritious and flavorful quinoa pilaf with herbs, perfect as a side dish for pork chops and broccoli.

Rinse quinoa under cold water to remove bitterness.
In a medium saucepan, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
Per serving
Add minced garlic to the onions and cook for another minute until fragrant.
Pour in the rinsed quinoa and toast it for 2–3 minutes, stirring frequently until slightly golden.
Add the vegetable broth, salt, and black pepper to the saucepan. Bring to a boil, then reduce heat to low and cover. Simmer for 15 minutes or until quinoa is fluffy and liquid is absorbed.
Remove from heat and let it sit covered for an additional 5 minutes.
Fluff quinoa with a fork and stir in chopped parsley and thyme before serving.
