In a food processor, combine lime juice, orange juice, olive oil, garlic, soy sauce, and ground black pepper. Blend until smooth to create the marinade.
Place skirt steak in a ziplock bag or shallow dish and pour marinade over it, ensuring the steak is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes or up to 2 hours for deeper flavor.
Preheat grill over medium-high heat or heat a skillet over medium-high heat on the stovetop.
Remove the steak from the marinade, allowing excess to drip off. Grill or pan-sear the steak for about 4-5 minutes on each side for medium-rare, adjusting time if preferred by doneness level.
Once cooked to desired doneness, remove from heat and let the steak rest for 10 minutes before slicing it against the grain into thin strips.
While the steak rests, warm the corn tortillas on the grill or in a separate skillet until pliable.
Assemble tacos by placing sliced steak in each tortilla and topping with shredded lettuce, slices of avocado, a dollop of sour cream, and a squeeze of fresh lime juice on top.
